These pancakes are much more filling than the traditional fluffly ones made with refined carbohydrate. Since their base indgredients are a combination of flax seeds. pseudograins and coconut flour, they are packed with nourishment. I always like to add some protein powder. You can use any flavor you like. Chocolate or Vanilla tastes great in this recipe.
You can add 2 tsps. of baking powder if you like fluffier pancakes. I like them dense so I just omit it.
Top these with Agave nectar, Maple syrop, honey…whatever you like. Or eat them just like that!
- 1 cup buckwheat flour
- 1/4 cup fround flaxseeds
- 1/4 cup coconut flour
- 1 scoop protein powder-Optional
- 2 tsp. baking powder-Optional
- 1 tsp. cinnamon
- 1/8 tsp. clove
- 1 banana
- 2 cups water
In a bowl, mix buckwheat flour, flaxseed, coconut flour, cinnamon, cloves (optional) and protein powder.
In a food processor, process the banana and water while slowly adding the dry ingredients, until the mixture is smooth.
Lightly oil a pan with coconut oil and heat over medium heat. Pour in pancake batter to a desired pancake size and cook for about 3- 5 minutes or until bubbles begin to appear. Flip and allow to cook for another 3- 5 minutes.
