Lemon coconut truffles
These lemon coconut truffles are just scrumtilicious! It is the first time I make this recipe. I have to say they are so yummy and very easy to make! Now that I made them this way I think next time I will add some vanilla protein powder just to give them more more protein even with the almond meal. This would make for a great pre and post-workout snack. However I ate most of these as a dessert snack. They just are too good to resist. 😉
Yields about 25
- 2 1/2 cups shredded coconut unsweetened
- 1 cup almond meal
- 3/8 cup coconut oil
- 1/3 cup honey
- grated zest and juice of 1 lemon
- 1 tsp. vanilla extract
- a pinch of sea salt
Set aside 1/2 cup of coconut for dusting the truffles.
Put remaining ingredients and coconut in food processor and process until well combined.
Scoop small spoonfuls and roll between the palms of your hands into a small ball shapes.
Roll in shredded coconut set aside.
Refrigerate and they will become firmer.
